Chia pudding takes only a small amount of time to prepare in the evening - place in the fridge over night, and you have a delicious and filling snack ready to go for the next day. In Eastern Medicine, beets are great for increasing blood (low iron/fatigue), and Chia is a great source of soluble fibre as well as protein and healthy omega 3 fats.
